Cabbage Fat-burning Soup

Ingredients
  

  • 1 medium head cabbage about 6 cups chopped
  • 1 tablespoon olive oil
  • 1 large onion chopped
  • 3 cloves garlic minced
  • 3 medium carrots peeled and diced
  • 2 stalks celery chopped
  • 1 bell pepper bell pepper diced, optional
  • 1 can diced tomatoes 14.5 oz
  • 4 cups vegetable broth or chicken broth
  • 1 teaspoon ground turmeric
  • 1 teaspoon cumin
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon cayenne pepper optional
  • salt to taste
  • fresh parsley or cilantro for garnish, optional

Instructions
 

  • Prepare the vegetables: Chop cabbage into bite-sized pieces, dice onion, peel and slice carrots, chop celery and bell pepper, and mince garlic.
  • Sauté the vegetables: Heat olive oil in a large pot over medium heat. Add onions, carrots, celery, and bell pepper. Sauté for 5-7 minutes until vegetables start to soften.
  • Add garlic and spices: Stir in garlic, turmeric, cumin, black pepper, and cayenne pepper. Cook for 1 minute to release aromatic oils.
  • Simmer the soup: Add cabbage, diced tomatoes, and vegetable broth. Bring to a boil, reduce heat, and simmer for 20-25 minutes until cabbage is tender.
  • Taste and adjust seasoning: Add salt and additional cayenne pepper if desired.
  • Serve: Ladle soup into bowls and garnish with fresh parsley or cilantro.

Notes

This soup is a great base; feel free to customize with other vegetables or add a squeeze of lemon for extra brightness.
