Instructions
Prepare the vegetables: Chop cabbage into bite-sized pieces, dice onion, peel and slice carrots, chop celery and bell pepper, and mince garlic.
Sauté the vegetables: Heat olive oil in a large pot over medium heat. Add onions, carrots, celery, and bell pepper. Sauté for 5-7 minutes until vegetables start to soften.
Add garlic and spices: Stir in garlic, turmeric, cumin, black pepper, and cayenne pepper. Cook for 1 minute to release aromatic oils.
Simmer the soup: Add cabbage, diced tomatoes, and vegetable broth. Bring to a boil, reduce heat, and simmer for 20-25 minutes until cabbage is tender.
Taste and adjust seasoning: Add salt and additional cayenne pepper if desired.
Serve: Ladle soup into bowls and garnish with fresh parsley or cilantro.
Notes
This soup is a great base; feel free to customize with other vegetables or add a squeeze of lemon for extra brightness.
