Ingredients
  

  • 1 medium head cabbage chopped
  • 2 medium carrots peeled and chopped
  • 2 stalks celery chopped
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 tbsp parsley chopped (plus extra for garnish if desired)
  • 1 can diced tomatoes with juice
  • 4 cups vegetable broth low sodium
  • 1 tbsp olive oil
  • 1 tbsp lemon juice fresh
  • 1 tsp turmeric
  • 1 tsp cumin
  • 0.5 tsp black pepper
  • 0.5 tsp paprika
  • 1 tsp salt to taste (start with 1 tsp and adjust)

Instructions
 

  • Sauté chopped onion, garlic, carrots, and celery in olive oil until softened.
  • Add cabbage, turmeric, cumin, black pepper, paprika, and salt. Stir well.
  • Pour in diced tomatoes with juice and vegetable broth. Bring to a simmer.
  • Reduce heat, cover, and let simmer for 25-30 minutes until vegetables are tender.
  • Stir in lemon juice and garnish with fresh parsley before serving.
