Instructions
Sauté chopped onion, garlic, carrots, and celery in olive oil until softened.
Add cabbage, turmeric, cumin, black pepper, paprika, and salt. Stir well.
Pour in diced tomatoes with juice and vegetable broth. Bring to a simmer.
Reduce heat, cover, and let simmer for 25-30 minutes until vegetables are tender.
Stir in lemon juice and garnish with fresh parsley before serving.
