Instructions
Cook chorizo in a pot over medium heat, breaking it up, until browned, about 5-7 minutes.
Add onion and garlic, sauté until onion is translucent, about 3-4 minutes.
Stir in potatoes and smoked paprika, coating well with chorizo and onions.
Add chicken broth, bring to a boil, then simmer until potatoes are tender, about 15-20 minutes.
Mash some potatoes to thicken the soup, then stir in heavy cream and season with salt and pepper.
Heat through and serve hot, garnished with green onions.
Notes
For a lighter version, use low-sodium broth and adjust seasoning to taste.
