Creamy Chorizo Potato Soup

Ingredients
  

  • 1 lb chorizo sausage casings removed
  • 1 large onion diced
  • 3 cloves garlic minced
  • 4 cups potatoes peeled and diced (approximately 4 medium potatoes)
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 tsp smoked paprika
  • 0.5 tsp black pepper
  • 0.5 tsp salt adjust to taste
  • 2 tbsp olive oil optional, for sautéing

Instructions
 

  • Cook chorizo in a pot over medium heat, breaking it up, until browned, about 5-7 minutes.
  • Add onion and garlic, sauté until onion is translucent, about 3-4 minutes.
  • Stir in potatoes and smoked paprika, coating well with chorizo and onions.
  • Add chicken broth, bring to a boil, then simmer until potatoes are tender, about 15-20 minutes.
  • Mash some potatoes to thicken the soup, then stir in heavy cream and season with salt and pepper.
  • Heat through and serve hot, garnished with green onions.

Notes

For a lighter version, use low-sodium broth and adjust seasoning to taste.
