Instructions
Add potatoes, chicken broth, cooked bacon, onion, garlic, salt, and pepper to the crockpot. Cover and cook on high for 3-4 hours or low for 5-6 hours, until potatoes are fork-tender. Lightly mash the potatoes.
Add butter, flour, milk, shredded cheese, and sour cream to the pot. Mix well and cook for 30 minutes to 1 hour on low, until thickened.
Garnish with green onions and serve with your favorite toppings.
Notes
For a lighter version, use low-fat milk and reduced-fat cheese.
