Vegetable oil for frying
Instructions
1. Marinate the chicken breasts in buttermilk mixed with salt and pepper for at least 1 hour.
2. Set up a breading station with one bowl of seasoned flour and another with beaten eggs.
3. Dredge each piece of chicken in flour, then dip into the eggs, and coat again in flour.
4. Heat vegetable oil in a skillet to 350°F (175°C).
5. Fry the coated chicken pieces until golden brown, about 6-8 minutes per side.
6. Drain on paper towels and serve hot with your favorite gravy.
Notes
For extra crispy coating, let the breaded chicken rest for 10-15 minutes before frying.
