Hearty Cabbage Roll Soup Recipe

Ingredients
  

  • 1 lb ground beef (lean)
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 medium head green cabbage, chopped
  • 1 can (15 oz) tomato sauce
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups beef broth (low sodium)
  • 2 cups water
  • 0.5 cup uncooked white rice or brown rice for a healthier twist
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon brown sugar (optional) for subtle sweetness
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • 1 bay leaf
  • Fresh parsley (chopped, for garnish)

Instructions
 

  • Brown ground beef in a large pot over medium heat, breaking it up with a spoon. Drain excess grease.
  • Add diced onion and minced garlic. Sauté until onion is translucent, about 3-4 minutes.
  • Stir in chopped cabbage and cook for 5 minutes. Add diced tomatoes and tomato sauce. Mix well.
  • Add beef broth, water, Worcestershire sauce, brown sugar, paprika, oregano, salt, pepper, and bay leaf. Stir to combine.
  • Add uncooked rice. Bring to a boil, reduce heat, cover, and simmer for 25-30 minutes until rice and cabbage are tender.
  • Remove bay leaf, adjust seasoning, and serve hot. Garnish with chopped parsley.

Notes

For a healthier option, use brown rice and adjust seasoning to taste.
