Instructions
Heat olive oil in a large pot over medium heat. Add onion and cook until soft, about 4-5 minutes.
Stir in garlic and thyme, cooking for another minute until fragrant.
Add diced potatoes and chicken broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes or until potatoes are tender.
Remove about 1/3 of the soup and blend until smooth. Return to the pot.
Stir in milk, heavy cream, salt, and pepper. Simmer for 5 minutes.
Add shredded cheddar cheese and stir until melted and creamy. Serve hot, topped with crumbled bacon and sliced green onions.
Notes
For a lighter version, use less heavy cream or substitute with more milk. You can also use leftover bacon for added smokiness.
