Hearty Homestyle Creamy Potato Soup

A comforting and creamy potato soup with the added richness of bacon and cheddar cheese.

Ingredients
  

  • 6 medium Russet potatoes peeled and diced
  • 1 tablespoon olive oil
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1/2 teaspoon dried thyme
  • 4 cups chicken broth
  • 1 cup milk
  • 1/2 cup heavy cream
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 slices cooked bacon crumbled
  • 2 green onions green onions sliced (for garnish)

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add onion and cook until soft, about 4-5 minutes.
  • Stir in garlic and thyme, cooking for another minute until fragrant.
  • Add diced potatoes and chicken broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes or until potatoes are tender.
  • Remove about 1/3 of the soup and blend until smooth. Return to the pot.
  • Stir in milk, heavy cream, salt, and pepper. Simmer for 5 minutes.
  • Add shredded cheddar cheese and stir until melted and creamy. Serve hot, topped with crumbled bacon and sliced green onions.

Notes

For a lighter version, use less heavy cream or substitute with more milk. You can also use leftover bacon for added smokiness.
