Slow Cooker Chicken Stew

Ingredients
  

  • 1 pound chicken breasts, boneless and skinless
  • 4 cups chicken broth
  • 3 medium carrots, peeled and chopped
  • 3 medium potatoes, peeled and cubed
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 cup frozen peas
  • 2 tablespoons olive oil
  • 2 tablespoons flour

Instructions
 

  • Heat olive oil in a skillet over medium heat. Cook chopped onion until soft, about 4-5 minutes. Add garlic and cook for 1 minute.
  • Sprinkle flour over onions and garlic, cook for 1-2 minutes. Gradually stir in chicken broth to make a smooth mixture.
  • Transfer mixture to slow cooker. Add chicken, carrots, potatoes, thyme, rosemary, salt, and pepper. Cook on low for 6-7 hours.
  • Shred cooked chicken and return to slow cooker. Stir in frozen peas and cook for 5 minutes. Adjust seasoning if needed.
  • Serve hot, ensuring each serving has plenty of vegetables and broth.
