Instructions
Heat olive oil in a skillet over medium heat. Cook chopped onion until soft, about 4-5 minutes. Add garlic and cook for 1 minute.
Sprinkle flour over onions and garlic, cook for 1-2 minutes. Gradually stir in chicken broth to make a smooth mixture.
Transfer mixture to slow cooker. Add chicken, carrots, potatoes, thyme, rosemary, salt, and pepper. Cook on low for 6-7 hours.
Shred cooked chicken and return to slow cooker. Stir in frozen peas and cook for 5 minutes. Adjust seasoning if needed.
Serve hot, ensuring each serving has plenty of vegetables and broth.
